# Directions:

01 - Heat olive oil in a skillet over medium heat. Add the chopped onion and cook for 3 to 4 minutes, stirring occasionally, until softened.
02 - Add minced garlic, ground cumin, chili powder, smoked paprika, and ground coriander. Stir and cook for 30 seconds until fragrant.
03 - Add drained and rinsed black beans with water or vegetable broth. Simmer for 5 to 6 minutes, mashing some of the beans gently to thicken the mixture while leaving some whole for texture.
04 - Season the bean mixture with salt, black pepper, and fresh lime juice. Stir well and remove from heat.
05 - Warm tortillas in a dry skillet over medium heat for about 30 seconds per side, or microwave under a damp towel until pliable.
06 - Fill each tortilla with black bean filling and desired toppings such as lettuce, avocado, tomatoes, red onion, and cilantro. Top with vegan sour cream if using and serve with lime wedges.
