# Directions:
01 - In a large heavy-bottomed pot or Dutch oven, cook the sausage over medium heat, breaking it up with a spoon, until browned and cooked through, about 5 minutes. Remove excess fat if necessary, leaving about 1 tablespoon.
02 - Add the chopped onion and cook until softened, approximately 3 minutes. Stir in minced garlic and cook for an additional 1 minute.
03 - Stir in pumpkin puree, chicken broth, heavy cream, dried sage, dried thyme, fresh ground nutmeg, salt, black pepper, and red pepper flakes if using. Mix thoroughly to combine.
04 - Add the uncooked short pasta to the pot, stirring to ensure the pasta is mostly submerged in the liquid.
05 - Bring the mixture to a gentle boil. Reduce heat to medium-low, cover, and simmer for 12 to 14 minutes, stirring occasionally, until the pasta is al dente and the sauce has thickened. Add a splash of broth if necessary.
06 - Stir in the baby spinach until wilted if using, then fold in grated Parmesan until melted and creamy.
