06 - 16 small fresh mozzarella balls (bocconcini), drained
07 - 16 cherry tomatoes, halved

# Directions:
01 - Combine cold sushi rice with rice vinegar, sugar, and salt in a bowl, stirring thoroughly.
02 - Line an 8x8-inch pan with plastic wrap, press seasoned rice evenly into the pan, cover, and refrigerate for at least 20 minutes to firm up.
03 - Remove chilled rice block from pan and cut into 16 equal squares.
04 - Heat neutral oil in a non-stick skillet over medium-high heat and sear rice squares in batches for 2 to 3 minutes per side until golden and crisp. Drain on paper towels.
05 - Top each crispy rice square with a mozzarella ball, a halved cherry tomato, and a basil leaf.
06 - Drizzle with extra virgin olive oil and balsamic glaze, then season with salt and black pepper to taste. Serve immediately while warm and crisp.
