→ Assembly

17 - 4 soft sub rolls, 6 inches each
18 - 2 tablespoons unsalted butter, softened
19 - 1/2 cup shredded mozzarella cheese
20 - 2 tablespoons chopped fresh parsley for garnish

# Directions:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - In a large bowl, combine ground turkey, breadcrumbs, Parmesan, egg, garlic, parsley, oregano, salt, and pepper. Mix until just combined.
03 - Shape mixture into 16 meatballs and place them on the prepared baking sheet.
04 - Bake meatballs for 18 to 20 minutes, or until golden and cooked through.
05 - While meatballs bake, melt butter in a medium saucepan over medium heat. Add garlic and cook 1 minute until fragrant.
06 - Stir in flour and cook for 1 minute. Slowly whisk in milk. Bring to a simmer, stirring constantly, until slightly thickened, approximately 2 to 3 minutes.
07 - Stir in Parmesan cheese, black pepper, and salt to taste. Cook until cheese is melted and sauce is smooth. Remove from heat.
08 - When meatballs are done, transfer to the sauce and gently toss to coat.
09 - Preheat oven broiler. Split sub rolls and spread insides with softened butter. Place on a baking sheet, buttered side up, and broil 1 to 2 minutes until lightly toasted.
10 - Arrange 4 meatballs with sauce in each roll. Sprinkle with mozzarella and broil another 1 to 2 minutes until cheese is melted and bubbly.
11 - Garnish with chopped parsley and serve immediately.

# Expert Advice:

01 -
  • These subs deliver restaurant-quality flavor but are easy enough to make on a busy weeknight.
  • The turkey meatballs are lighter than traditional beef but still incredibly satisfying.
  • The garlic-Parmesan cream sauce takes these sandwiches to a whole new level of delicious.
  • Every bite offers the perfect combination of tender meatballs, creamy sauce, toasty bread, and melty cheese.
02 -
  • Use a cookie scoop or ice cream scoop for uniformly sized meatballs that will cook evenly.
  • Don't overcrowd the baking sheet when baking the meatballs—this ensures they brown properly rather than steam.
  • If your sauce becomes too thick, thin it with a little additional warm milk.
  • For an extra layer of flavor, lightly toast the sub rolls, then rub with a cut garlic clove before spreading with butter.
  • These meatballs freeze beautifully (without the sauce). Make a double batch and freeze half for a quick future meal.
