15 - 1 small cucumber, thinly sliced

→ Base
20 - 8 small corn or flour tortillas (soft taco size)

# Directions:
01 - In a mixing bowl, combine soy sauce, sesame oil, brown sugar, minced garlic, grated ginger, and gochujang. Add the sliced beef, chicken, or tofu, toss thoroughly, and marinate for 15 to 20 minutes.
02 - Place cooked ube or sweet potato, sour cream or yogurt, lime juice, honey or maple syrup, and a pinch of salt in a blender or food processor. Blend until the mixture is smooth and vibrant. Refrigerate until ready to serve.
03 - Heat a skillet or grill pan over medium-high heat. Cook the marinated protein for 4 to 6 minutes, stirring occasionally, until evenly browned and fully cooked. Set aside.
04 - Heat tortillas in a dry skillet or microwave until soft and pliable. For bowl preparation, fluff the cooked rice.
05 - For tacos, spread a layer of ube crema on each tortilla, add cooked protein, then top with chopped kimchi, shredded cabbage, sliced cucumber, jalapeño, chopped cilantro, toasted sesame seeds, and pickled red onions. For bowls, layer rice with toppings and finish with a generous drizzle of ube crema.
