# Directions:

01 - Heat a large skillet over medium-high heat. Add ground beef or turkey and cook, breaking it up with a spoon, until browned and no longer pink, approximately 4 to 5 minutes. Drain excess fat if necessary.
02 - Add diced onion and red bell pepper to the skillet. Cook for 3 to 4 minutes until softened.
03 - Stir in minced garlic and cook for 1 minute until fragrant.
04 - Stir in rinsed rice, frozen corn, and frozen peas until evenly mixed.
05 - Sprinkle kosher salt, black pepper, smoked paprika, dried oregano, and optional chili powder over the mixture. Stir to combine thoroughly.
06 - Pour in chicken or vegetable broth and bring mixture to a gentle boil over medium-high heat.
07 - Reduce heat to low, cover skillet, and simmer for 15 to 18 minutes until rice is tender and liquid is absorbed.
08 - Remove skillet from heat and let stand, covered, for 5 minutes to finish steaming.
