01 - 10 oz short pasta such as fusilli, penne, or farfalle
02 - 3.5 oz romaine lettuce, chopped
03 - 1.75 oz baby spinach, optional
→ Sardines
04 - 2 cans sardines in olive oil, 4 oz each, drained and filleted
→ Caesar Dressing
05 - 1/3 cup mayonnaise
06 - 1 oz grated Parmesan cheese
07 - 2 anchovy fillets, finely chopped
08 - 1 small garlic clove, minced
09 - 2 teaspoons Dijon mustard
10 - 2 tablespoons fresh lemon juice
11 - 2 tablespoons extra virgin olive oil
12 - Salt and freshly ground black pepper, to taste

14 - 0.7 oz shaved Parmesan

# Directions:
01 - Boil pasta in a large pot of salted water according to package instructions until al dente. Drain, rinse with cold water, and set aside.
02 - Place chopped romaine lettuce and optional baby spinach in a large mixing bowl.
03 - In a separate bowl, whisk mayonnaise, grated Parmesan, anchovy fillets, minced garlic, Dijon mustard, lemon juice, olive oil, salt, and black pepper until smooth.
04 - Add cooled pasta to the bowl with greens and toss lightly.
