14 - 2 tablespoons coconut oil
15 - 1 medium onion, diced
16 - 3 garlic cloves, minced

18 - 1 cup red lentils, rinsed
19 - 1 can (14 ounces) coconut milk
20 - 2 cups vegetable broth
21 - 1 medium carrot, sliced
22 - 1 red bell pepper, sliced

→ Caribbean Sweet Potato Curry

26 - 2 tablespoons olive oil

31 - 2 large sweet potatoes, peeled and diced

34 - 1 cup vegetable broth

# Directions:

01 - Warm vegetable oil in a large skillet over medium heat. Add chopped onion and sauté until soft, about 5 minutes.
02 - Incorporate garlic and ginger; sauté for 1 minute, then add cumin, coriander, turmeric, and garam masala. Cook for 1 minute until fragrant.
03 - Add diced tomatoes, chickpeas, coconut milk, and salt. Combine thoroughly, bring to a gentle simmer, and cook uncovered for 15 minutes, stirring occasionally.
04 - Top with fresh cilantro before serving.
05 - Heat coconut oil in a large pan over medium heat. Sauté diced onion until translucent, approximately 4 minutes.
06 - Add garlic and red curry paste; cook for 1 minute.
07 - Stir in red lentils, coconut milk, vegetable broth, sliced carrot, and bell pepper. Bring to a boil, then reduce heat and simmer for 20 minutes, stirring occasionally until lentils are tender.
08 - Mix in soy sauce and lime juice. Garnish with fresh basil or cilantro.
09 - Heat olive oil in a large pot over medium heat. Add sliced onion and cook until softened, about 5 minutes.
10 - Incorporate minced garlic and chili; sauté for 1 minute.

12 - Add diced sweet potatoes, coconut milk, black beans, vegetable broth, thyme, salt, and pepper. Stir well and bring to a simmer.
