01 - 2 large zucchini, ends trimmed

# Directions:
01 - Set oven to 400°F. Line a baking sheet with parchment paper.
02 - Using a mandoline slicer or sharp knife, cut zucchini lengthwise into thin strips approximately 1/8 inch thick.
03 - Arrange zucchini strips on the baking sheet, lightly salt them, and allow to rest for 10 minutes to draw out moisture. Pat dry with paper towels.
04 - Spread a thin layer of marinara sauce evenly over each zucchini strip.
05 - Sprinkle mozzarella cheese, Parmesan, and desired fillings such as pepperoni, olives, and bell peppers evenly over each strip.
06 - Sprinkle dried Italian herbs, salt, and pepper over the layered ingredients.
07 - Carefully roll each zucchini strip and place seam-side down in a greased baking dish.
