# Directions:
01 - Whisk almond milk, chia seeds, maple syrup, and vanilla extract in a medium bowl. Let rest for 10 minutes, stir to eliminate clumps, then cover and refrigerate for a minimum of 2 hours until thickened.
02 - Combine diced apples with lemon juice and ground cinnamon in a small bowl. Set aside.
03 - Stir chia pudding thoroughly. In serving glasses or bowls, layer pudding, then apple mixture, and swirl in 1 tablespoon peanut butter per serving. Repeat layers if desired.
04 - Top servings with chopped roasted peanuts, apple slices, and an optional drizzle of maple syrup.
