I created this Neon Noodle Cloud for a birthday party, and the reaction was pure delight. Watching faces light up at the first swirl of technicolor noodles made the whole effort worthwhile.

Ingredients

  • Noodles: 300 g dried wheat noodles or ramen noodles, food coloring gels (pink, blue, yellow, green: gel coloring preferred for vibrancy)
  • Cloud Sauce: 200 ml whole milk or plant-based milk, 120 g cream cheese (or vegan alternative), 1 tbsp unsalted butter (or vegan butter), 2 tbsp grated parmesan cheese (or nutritional yeast for vegan), 1 tsp cornstarch, 1/4 tsp salt, 1/4 tsp white pepper
  • Garnish: 2 scallions, finely sliced, 1 tbsp toasted sesame seeds, edible flowers or microgreens (optional)

Prepare Colored Noodles:
Bring a large pot of water to a boil. Divide the water into separate bowls for each color you wish to use.

Add Creaminess:
Whisk in milk, parmesan, cornstarch, salt, and white pepper. Cook, stirring constantly, until thick and creamy, about 5 minutes.

Components

Noodles

01 10.5 oz dried wheat noodles or ramen noodles
02 Food coloring gels (pink, blue, yellow, green; gel coloring recommended)

Cloud Sauce

01 3/4 cup whole milk or plant-based milk
02 4.2 oz cream cheese or vegan substitute
03 1 tablespoon unsalted butter or vegan butter
04 2 tablespoons grated parmesan cheese or nutritional yeast
05 1 teaspoon cornstarch
06 1/4 teaspoon salt
07 1/4 teaspoon white pepper

Garnish

01 2 scallions, finely sliced
02 1 tablespoon toasted sesame seeds
03 Edible flowers or microgreens (optional)

Directions

Phase 01

Prepare Color Baths: Bring a large pot of water to a rolling boil. Divide the boiling water into several heatproof bowls corresponding to the number of colors intended for use.

Phase 02

Color Water: Stir a small amount of gel-based food coloring into each bowl, mixing thoroughly to achieve vibrant hues.

Phase 03

Cook Noodles by Color: Separate dried noodles into equal portions and cook each batch in its colored boiling water for 2 to 3 minutes less than the package instructions. This keeps the noodles al dente for final cooking. Drain and rinse under cold water to halt further cooking, then set aside.

Phase 04

Prepare Creamy Sauce: Melt unsalted butter in a saucepan over medium heat. Add cream cheese and gently stir until fully blended and smooth.

Phase 05

Finish Sauce: Add whole milk, grated parmesan cheese, cornstarch, salt, and white pepper to the pan. Whisk continuously over medium heat until the mixture thickens and attains a smooth, creamy consistency, about 5 minutes.

Phase 06

Combine Noodles and Sauce: Gently fold colored noodles into the sauce, taking care to keep colors distinct, or swirl lightly for a marbled effect.

Phase 07

Garnish and Serve: Serve immediately, topping each plate with sliced scallions, toasted sesame seeds, and edible flowers or microgreens as desired.
